BROCCOLI CASSEROLE
 

2 (10 oz.) pkgs. broccoli spears
1 (10 oz.) pkg. broccoli pieces
1 env. Lipton onion soup mix
1 1/2 - 2 c. milk
6 tbsp. flour
2 sticks butter
2 c. toasted (or dry) bread crumbs (or cracker crumbs)
Bacon bits, grated cheese, pimientos, hard boiled egg or pieces of turkey, chicken or ham are optional
Potato chip crumbs (opt.)

Cook broccoli spears and pieces in separate pans according to package directions (pieces cook faster).

While broccoli is cooking, prepare heavy white sauce, beginning with 1 stick butter melted in heavy skillet. Add and stir in flour and gradually add milk while stirring. Add onion soup mix and cook about 10 minutes, stirring occasionally. Melt other stick of butter and mix with crumbs. Use half in bottom of 9"x13" casserole dish, sprayed with Pam. Layer broccoli spears (after draining) on crumbs and fill in with pieces.

Pour white sauce over broccoli and add more broccoli until used. Add optional items and more milk if too thick. Top with remainder of crumbs. Crumbs could be mixed with potato chip crumbs. Can be prepared in advance and refrigerated or frozen. Bake at 375 degrees for 1/2 hour.
