DILLED ZUCCHINI BAKE
 

3 c. coarsely grated zucchini, well drained
3 eggs, well beaten
1/2 c. minced green onions
2 cloves garlic, peeled and minced
1/2 c. freshly grated Parmesan cheese
1/2 c. buttermilk baking mix
1 tsp. chopped fresh dill
1 tsp. chopped fresh chives
1 tsp. salt or to taste
1 tsp. black pepper
2 tbsp. vegetable oil
Additional grated Parmesan cheese

Combine zucchini, eggs, green onions, garlic, 1/2 cup cheese, baking mix, dill, chives, salt, pepper and oil. Turn mixture into a lightly oiled 9x13x2 inch baking dish. Bake in preheated 350 degree oven for 30 minutes or until browned. Remove from oven and sprinkle with additional cheese. 6 to 8 servings.
