VIDALIA ONION CASSEROLE
 

4 med. vidalia onions, sliced
1 stick butter
1 can cream of mushroom soup
12 crackers, crushed
1/3 c. milk
2 eggs
Grated cheddar cheese

Melt butter and cook onions until tender. Butter a casserole dish and cover bottom with cracker crumbs (reserve some for the top). Alternate in layers the onions and soup. Beat eggs and milk. Pour over casserole. Sprinkle with cheese and remaining crumbs. Bake at 350 degrees for 20-30 minutes.

NOTE: After the onions are cooked, lift them out of the butter with a fork or slotted spoon to put them in the casserole. They might be too greasy if all the butter is used in the casserole.
