VIDALIA ONION CASSEROLE
 

5 lg. Vidalia onions
2 stick butter
24 Ritz crackers
Parmesan cheese

Peel onions and slice into thin rings. Saute onion in butter for 15 to 20 minutes or until clear. Put half the onions into a casserole, top with half the crumbs and sprinkle with cheese. Repeat layers ending with cheese.

Bake, uncovered, at 325 degrees for 30 minutes. You may want to add a little milk to sauteed onions or if they are a little dry after baking. This can be cut in half.
