SHAKER DRIED CORN
 

1 c. shaker dried corn
1 tsp. sugar
1 tsp. salt
1 tbsp. butter
1/4 c. cream (or milk thickened with flour)
1/4 tsp. paprika, optional

Shaker dried corn is a delightful dish with great flavor, but it must be prepared carefully and slowly. First, it should be washed, then simmered slowly for 5 hours, or else soaked in lukewarm water for 12 hours. If it is put on the stove in the morning to simmer in enough water to cover, add to it the salt and the sugar. If it boils dry, add water. It should simmer for at least 2 hours, after which add the butter and the cream (or thickened milk) with a teaspoon of flour mixed in water. Serve hot, sprinkled with paprika if desired.
