HONEY AND CINNAMON CANDIED YAMS
 

6 lg. yams
2 tbsp. cold water
1/2 tsp. cinnamon
1 1/2 grated lemon rind
1 tsp. salt
1 1/2 tbsp. cornstarch
1 1/2 c. honey
1/8 tsp. nutmeg
1/4 c. orange juice
6 tbsp. butter
2 tsp. lemon juice

Preheat oven to 375 degrees. Butter a large casserole. Cook the yams until tender. Peel the yams and cut them in half lengthwise. Place them in prepared casserole. Dissolve cornstarch in cold water. Combine the honey, cinnamon, nutmeg, lemon rind, lemon juice, orange juice and salt in saucepan. Bring to a boil and add to corn starch mixture. Cook over medium heat, stirring constantly, until it boils and becomes thin and clear. Remove from heat and add butter. Pour the mixture over the yams. Bake at 375 degrees for 15 to 25 minutes until bubbly. Serves 8.
