HONEY AND CINNAMON CANDIED YAMS
 

6 lg. yams
1 1/2 tbsp. cornstarch
2 tbsp. cold water
1 1/2 c. honey
1/2 tsp. cinnamon
1/8 tsp. nutmeg
1 1/2 tsp. lemon rind, grated
2 tsp. lemon juice
1/4 c. orange juice
1 tsp. salt
6 tbsp. butter

Preheat oven to 375 degrees. Butter a large ovenproof casserole.

Scrub the yams. Cook the yams in boiling salted water until tender. Drain. Rinse with cold water. Peel and cut the yams in half lengthwise; place in the prepared casserole. Dissolve the cornstarch in the cold water.

Combine the honey, cinnamon, nutmeg, lemon rind, lemon juice, orange juice, and salt in a saucepan. Bring to a boil. Add the cornstarch mixture. Cook over medium heat, stirring constantly, until the mixture is thick and clear. Remove from the heat. Add the butter. Pour the mixture over the yams. Bake at 375 degrees for 15 minutes.
