CREPES (EGG AND SAUSAGE)
 

Scramble desired number of eggs (with milk, salt, pepper) and cook allowing 2 eggs per 3 crepes. Add chopped chives, sauteed onions and shredded cheese for additional flavor. Place two tablespoonfuls of scrambled eggs on each crepe. Place a cooked sausage link in the middle. Fold crepe and pour a small amount of diluted cream of mushroom soup over the top; serve hot. Make them up and put them in a microwave for a few seconds just before serving. (I often serve this recipe and the following strawberry crepe together. Our son-in-law ALWAYS asks if we'll be having these during their stay in Minnesota.)
