1 pkg. O'Brien hash browns
1 roll pork sausage
Ham, cut up
4 eggs, beaten
Velveeta shredded Mexican cheese
12 sm. Candy's flour tortillas
One or both.
In large pan cook hash browns according to package directions. In a separate pan brown sausage. When hash browns are almost fully cooked, add ham and sausage until ham is warm. Pour beaten eggs over everything. Cook until eggs are set, stirring constantly.
Place one tortilla shell on foil. Put egg mixture and cheese on shell and fold and wrap with foil. (You should be able to fill all 12 shells.) Place in 275 to 300 degree oven for about 15 minutes. Bake only those you need. Refrigerate the rest. Use salsa if desired.
