TACO SALAD
 

1 1/2 lb. ground beef
1 head lettuce
1 can El Paso Mexican tomato sauce
3/4 c. Mayonnaise
1/2 c. cabbage
1 c. mild cheddar cheese, grated
2 tomatoes, fresh, chopped
1/2 Spanish (brown) onion
1 can sliced olives
1 bag nacho cheese or taco flavored Doritos tortilla chips, lg. bag

Prepare sauce first by combining mayonnaise with full can El Paso. Beat with whip until smooth. Refrigerate saute while preparing the salad.

Chop onion and brown with ground beef. Season to taste (i.e. garlic, cumin, oregano, seasoning salt). Chop lettuce and cabbage into small pieces; mix together in large bowl. Add olives, tomatoes and cheese and toss. Add browned ground beef and mix. Crush chips slightly and add to bowl (more or less to taste - you may not want to use the whole bag). Add sauce - you can either add and mix, or serve on the side.

LOW FAT IDEAS:

Substitute ground beef with ground turkey

Substitute mayonnaise with nonfat plain yogurt

Substitute chips with light chips

Substitute cheese with 2 grated carrots

Eliminate olives
