TAMALES
 

MASA DOUGH:

1 1/3 c. lard
4 c. Masa flour (Masa Harina by Quaker Co. can be ordered by stores)
2 tsp. salt
2 2/3 c. warm water or meat broth

Whip the lard until fluffy, blend in Masa flour, salt, water or broth, until it holds together well. Cover and keep cool until ready to use. Makes enough for 40 regular size tamales.
