MEXICAN MEAL IN ONE DISH ONE HOUR
 

1 c. long grain white rice, uncooked
1 c. niblet corn (Mexi-style)
Salt and pepper
1 sm. can green chiles, chopped
2 cans tomato sauce (Mexi-style)
1/2 can water
1/2 c. chopped yellow onion
1/2 c. chopped green or red pepper
3/4 lb. ground sirloin or chuck
4 slices bacon

In greased baking dish, place rice. Spread corn over, sprinkle with salt and pepper. Add green chiles. Pour over 1 can tomato sauce. Layer onion, layer the pepper. Place beef on next, sprinkle with salt and pepper or Mexican seasoning. Pour over the other can of tomato sauce. Lay bacon slices on top. Bake covered at 350 degrees for 1 hour. Uncover and bake 30 minutes longer. Great with cornbread.
