MEXICAN HOT DISH (MEAT LOAF)
 

2 lbs. ground beef
1 onion, chopped
1 can cream of mushroom soup
1 can chicken rice soup
2 jalapeno peppers (optional) or 1 can jalapeno peppers (hot or mild)
1 sm. can tomato sauce
1 sm. can enchilada sauce
1 pkg. Dorito (nacho chips) or 1 pkg. flour tortillas
1 lb. grated Cheddar cheese (approximately 3-4 c.)

Brown ground beef and onion in fry pan. Add all liquids to meat. Spread half of tortillas, broken in small pieces in bottom of buttered 9x13 inch pan or large casserole dish. Add half of meat mixture. Spread the other half of tortillas over meat and add the rest of meat mixture. Top with grated cheese.

Bake uncovered 30 minutes at 350 degrees until cheese is melted.

Serves 10-12.
