1 lb. barley (soaked overnight) 2 c. diced carrots 2 c. diced celery 1 med. onion, chopped 1 1/2 lbs. beef, cubed 3 qts. beef broth & 1 qt. chicken broth, canned or homemade broth Salt & pepper to taste Soak barley at least 8 hours in 2 quarts of water. Drain excess water. Use 8 quart pot. Put all ingredients in pot. Bring to boil. When soup begins to boil lower flame to medium-low and let simmer 90 minutes. Stir occasionally so barley doesn't stick to bottom. Makes 10 to 12 servings (about 7 quarts). Can be thinned with water and bouillon. |
