2 c. diced carrots 2 c. diced celery 1 med. onion, chopped 1 lb. mushrooms, sliced 4 qts. chicken broth 1 lb. barley, rinsed Vegetable oil 1 lb. beef cubed or flanken Salt to taste Pepper Saute carrots, celery and onion in oil in soup until tender. Add remaining ingredients. Cook 2 hours, stirring often. |
