BEEF STEW
 

1 1/2 lbs. beef stew meat, cut in 1 inch cubes
3 Irish potatoes, peeled, cut in 1 inch cubes
5 carrots, peeled, sliced 1 inch thick
1 lg. onion, chopped
8 lg. mushrooms, halved
1 tsp. salt (optional) or to taste
Pepper to taste
1 (12 oz.) can V-8 juice
1 1/2 to 2 tbsp. minute tapioca (optional to thicken)
1 c. red wine
