BLACKBEAN SOUP
 

1 pkg. black turtle beans
2 qt. water
1 med. onion, diced
1 clove garlic, diced
3 tbsp. olive oil
6 bay leaves
1 med. green pepper, diced (optional)
1-2 lb. smoked ham or ham hocks, diced

Soak beans overnight in 2-quart water. Pour beans and water into crock pot and add another 2-quarts water. Add bay leaves and ham or ham hocks. Saute onion, garlic and green pepper in olive oil until onions start to clear. Add to other ingredients. Cook all day on low or medium setting on crock pot.

Serve over 1/2 cup cooked rice in bowl. May add diced raw onion, red wine vinegar and olive oil to taste. Will serve 6-8.
