SOUP AND A BOILED DINNER
 

About 2-3 lbs. beef shank
2 qts. cold water
1 tsp. salt
parsley
4 peppercorns
4 cloves
1 lg. onion
3 ribs celery
3-4 carrots
2 tomatoes

Add all ingredients in large pot. Simmer about 3 - 3 1/2 hours. Add 3 small potatoes last 1/2 hour. Strain and pour broth over cooked, fine noodles. Serve meat with vegetables on platter with a sauce, i.e. horseradish, dill, etc.
