MOCK COOTER SOUP
 

3 lbs. lean beef or ground meat
1 pt. sweet milk
1 tbsp. flour
1/2 tsp. mace
1/2 tsp. dry mustard
1 1/2 qt. water
1/4 lb. butter
1/2 pt. cream
2 hard-boiled eggs cut up in medium-size chunks

Boil meat and water until one quart of liquid remains. Add one pint of milk and 1/4 pound butter. Remove meat, allow to cool, grind, and return to stock. Let it cook down a little more. Add flour dissolved in cream. Add seasoning.

Miz Ina also says: "To make a real one just add cooter meat instead of ground meat. That's the way we do it in Sandfly, Georgia."
