Sauté onions until translucent, but not browned.
Combine all ingredients (to taste). Spread on sheet pan. Refrigerate until firm.
Use a biscuit cutter to make rounds, then dredge in flour, then egg, then breadcrumbs.
Bake on a tray in a 350°F degree oven until brown and crisp.
These go great with any dish in place of any starch.
