BILOXI SHRIMP PATTIES
 

1 lb. raw shrimp, chopped
1 sm. onion, chopped
2 sm. potatoes, mashed
1/2 green pepper, chopped
4 crackers, crushed
1 egg, slightly beaten
1 stalk celery, chopped
6 stems parsley, chopped
1/2 c. olive oil
Salt & pepper to taste

Saute onions, parsley, celery and green pepper in olive oil until light brown. Add sauteed vegetables to mashed potatoes. Add chopped shrimp, then egg and crackers; mix well. Form into patties. Fry in deep fat until brown. Drain on paper towel.
