1 lb. lg. fresh shrimp, shelled, leaving tails 1 (8 oz.) can pineapple chunks and juice (natural juice) 1 tbsp. sesame oil 2 tbsp. soy sauce 1/4 tsp. white pepper 1/8 tsp. garlic powder 1/8 tsp. ground ginger (or grated fresh root) 6 pearl onions 6 cherry tomatoes 1 green pepper, in 1 inch cubes Marinate shrimp in first 6 ingredients for 1 hour. Cook onions in boiling water for 4-5 minutes. Alternate shrimp and vegetables on skewers (6). Broil 4-5 inches from heat, for 2-3 minutes until shrimp are done (pink). Baste with marinade while broiling. Serve on hot rice with soy sauce. |
