SCAMPI ALA MARINARA (Italian Shrimp)
 

1/2 c. olive oil
2 lg. cloves garlic (coarsely chopped)
3 1/2 to 4 c. tomatoes (fresh or canned)
Salt to taste
Pepper to taste
1 lb. shrimp (shelled and deveined)
Oregano and parsley to taste

Saute garlic in oil until light tan. Mash or strain tomatoes. Add to oil in pan with salt, pepper, oregano and parsley. Cook for 20 minutes. Add shrimp and cook for 20 minutes. Pour over cooked thin spaghetti (angel hair).
