1 lb. scallops 1 c. dry white wine 2 minced shallots or 3 scallions 3 sprigs parsley, chopped Freshly ground black pepper Lemon wedges Simmer the scallops, wine, shallots and parsley in a saucepan for 5-6 minutes. Sprinkle with pepper. Serve with lemon wedges. Delicious with brown rice. Yields: 4 servings. |
