1 c. sliced leeks 1 c. fresh mushrooms, sliced 1 c. fresh broccoli, chopped 1 clove garlic, minced 1/4 c. butter 1/4 c. flour 1/4 tsp. thyme Salt and pepper to taste 1 sm. bay leaf 3 c. chicken broth 1 c. half and half or lite cream 3/4 c. Jarlsberg or Swiss cheese, shredded 6 oz. crabmeat (fresh or frozen) In 3 quart saucepan cook leeks, mushrooms, broccoli and garlic in butter until crisp-tender. Blend in flour, thyme, salt, pepper and bay leaf. Add chicken broth and cream all at once. Cook, stirring until thickened and bubbly. Cook and stir 1 minute more, then add cheese. Stir until melted and add crabmeat. Heat thoroughly and serve. Serves 6. |
