SHRIMP, CRAB, OR LOBSTER QUICHE
 

Preheat oven to 350 degrees. 1/4 c. grated Swiss cheese

SHELLFISH MIXTURE:

2 tbsp. minced shallots or onions
3 tbsp. butter
1/4 lb. (1 c.) cooked, fresh or canned crab, shrimp, or lobster
1/4 tsp. salt
Pinch of pepper

EGG MIXTURE:

3 eggs
1 c. whipping cream
1 tbsp. ketchup
1/4 tsp. salt
Pinch of pepper

Shell Mixture: Cook shallots or onions in the batter for 1-2 minutes over moderate heat until tender, but not browned. Add shell fish, salt, and pepper; stir gently for 2 minutes. Allow to cool slightly.

Egg Mixture: Beat eggs in mixing bowl with cream, tomato paste, and seasonings. Gradually blend in shellfish and taste for seasoning.

Pour mixture into pastry shell and sprinkle the cheese over it. Bake in upper third of preheated oven for 25-30 minutes until quiche has puffed and browned.

Variation: Add 1/2 package (5 ounce) of chopped broccoli, thawed and drained.
