BREADED FILLET OF SOLE
 

1 lb. fillet or sole
1 egg, slightly beaten
1/2 c. bread crumbs
1/8 c. grated Parmesan cheese
1/2 tsp. paprika
Salt and pepper to taste
2 tbsp. butter, melted
1 tbsp. lemon juice

Dip fish in egg. Mix together dry ingredients. Roll fish in dry mixture. Fold fish in half and place in greased baking dish. Mix together butter and lemon juice. Pour over fish. Bake at 400 degrees for 20 minutes. Serves 4.
