TUNA TOMATO SURPRISE (Low Calorie)
 

6 oz. flaked tuna
2 oz. macaroni
1 c. cooked tomatoes
1/3 c. dry bread crumbs
1 tbsp. lemon juice
1 tsp. minced onion
1 tsp. parsley flakes
1/4 tsp. basil
Dash of pepper
Dash of sweetener
1/3 c. milk
1 tbsp. butter

Cook macaroni 6 minutes in boiling water. Combine tuna, tomatoes, half the bread crumbs, sweetener, spices and lemon juice in a small casserole sprayed with Pam. Drain macaroni; add to tuna mixture. Add milk and stir all ingredients together. Top with bread crumbs and dot with butter. Bake in 400 degree oven for 45 minutes or until golden brown on top. Serves 2.

Variation: Add leftover cooked vegetables such as peas, carrots or green beans to mixture before baking. Serve with green salad and fresh fruit for low calorie meal.
