1 lb. uncooked deveined dry shrimp 4 tbsp. butter (melt in same pan used to bake shrimp) 2 tbsp. chopped parsley 1 tsp. grated lemon peel 1/2 tsp. salt 3 to 6 cloves crushed garlic 1 tbsp. lemon juice and wedges Preheat oven to 400 degrees. Melt butter; add salt, garlic, parsley and mix. Arrange shrimp in single layer in butter mixture. Bake uncovered for 5 minutes. Turn shrimp and add lemon peel and juice. Bake 8 to 10 minutes. Serve over rice with pan juice. Garnish with lemon wedges. |
