1 1/2 lbs. shrimp, shelled
1/2 c. olive oil
2 cloves garlic, mashed or minced
1 tsp. salt
1/4 tsp. pepper
1 loaf Italian bread
About 1 1/2 hours before serving: Wash shrimp and pat dry. Mix together olive oil, garlic, salt and pepper and pour over shrimp. Marinate one hour turning shrimp occasionally.
Preheat oven to 400 degrees. Cut top off bread - hollow out inside of bottom, leaving 1/2 inch crust all around. Brush top and bottom inside and out with marinade. Bake for 15 minutes until toasted, set aside.
Turn oven to broil. Place shrimp on broiler pan with marinade. Lower oven setting to 300 degrees. Fill bread with shrimp, replace top, bake 5 minutes. Cut in slices to serve. Yields 4 servings.
