SOLE WITH RICOTTA CHEESE
 

2 tbsp. butter
1 clove garlic, crushed
1 large green onion
Thyme, salt and pepper to taste
1 (6 oz.) Ricotta cheese
1 1/2 tbsp. beaten egg
1 1/2 tsp. parsley
1 lb. Dover sole in 8 equal pieces
8 1/4" tomato slices
2 tbsp. butter
Juice of 1/4 lemon
1 (12 oz.) Mozzarella cheese (4 slices)

Saute garlic and onion in 2 tablespoons butter. Add thyme, salt and pepper; cool. When cooled add ricotta cheese, egg, and parsley. Place one piece of fish in lightly butter baking dish. Put a spoon full of ricotta cheese mixture on top of fish and top with another piece of fish, sealing edges. Place tomato slice on top of fish drizzle with melted butter and a squeeze of lemon. Repeat with remaining fish slices. Bake 15 to 20 minutes in 350 degree oven. Place Mozzarella cheese on top of tomato garnish with paprika and bake for an additional 5 minutes.
