SHRIMP SCAMPI
 

1 1/2 lbs. shrimp, cleaned with tail shell attached
1 stick butter
1/4 c. chopped scallions
4 cloves minced garlic
2 tbsp. chopped parsley
Rice

Saute scallions, garlic and parsley in butter for 1 minute. Remove from heat and add shrimp, tossing to coat.

Arrange shrimp in a shallow baking pan and cover with remaining butter mixture. Broil about 4 minutes or bake at 450 degrees for 4 to 7 minutes. Serve with rice.
