SHRIMP SCAMPI
 

2 lb. lg. raw shrimp (or good sized med. shrimp)
1/2 c. butter
1 tsp. salt
4-6 cloves garlic
1/4 c. chopped parsley
3 tbsp. lemon juice
6 lemon wedges

Preheat oven to 400 degrees. Remove shell from shrimp, leaving shell on tail only. Devein and wash under water. Drain on paper towels. Melt butter in baking dish in oven. Add salt, garlic, parsley, and mix well.

Arrange shrimp in single layer in baking dish. Bake uncovered for 5 minutes. Turn shrimp, sprinkle with lemon juice and paprika. Bake 8 to 10 minutes until tender. (Do not overcook). Arrange shrimp on heated serving platter. Pour garlic butter over all. Garnish with lemon wedges. Serves 6 to 8.
