2 eggs, beaten 1/2 c. soft tofu, drained 1/2 c. onion, finely chopped 1/2 tsp. dried basil 1/4 tsp. dried oregano 1/8 tsp. freshly ground pepper 2 tbsp. Parmesan cheese, freshly grated 1/2 c. cooked brown rice 1/2 c. whole grain bread crumbs 2 tbsp. soy protein powder 6 Seven-Grain Sprouted Wheat Buns Mash eggs and tofu together in a large bowl. Blend in onion and herbs. Add grated cheese, brown rice, bread crumbs, and protein powder, and mix well. Form 6 patties, and arrange them on a lightly oiled aluminum baking sheet. Loosely cover tops of burgers with foil, and bake in a preheated 350 degree oven for 20-25 minutes. Lift off foil the last 5 minutes of baking to brown tops. Serve on wheat buns with appropriate hamburger garnishes and condiments. Makes 6 Tofuburgers. |
