When you need a pizza and can't get to one.
Place a whole pita into a skillet over low-medium heat. When one side is sufficiently heated, turn over. Now you may begin spreading your ingredients over the top. So many combinations are possible: sauces, cheese, chilies, meats, vegetables, all of your choice. Let heat through until bottom of pita is a bit crispy. Remove from skillet and cut into quarters.
Boy, that was fast -and it tastes as good as a pizza substitute can.
