CHICKEN SALAD SANDWICH
 

Just think what you save in fat and sodium compared to a sandwich made with 2 ounces of bologna.

4 servings, 1 sandwich each. Per serving: Calories, 230; Total fat, 6 grams; Saturated fatty acids, 1 gram; Cholesterol, 33 milligrams; Sodium, 387 milligrams. 1/8 tsp. onion powder 1/8 tsp. dried tarragon, crushed Dash of garlic powder 1 c. chicken (without skin), cooked and chopped 1/2 c. celery, chopped 8 slices whole wheat bread 4 lettuce leaves

Mix salad dressing and seasonings in a bowl. Stir in chicken and celery. Mix well. Spread about 1/3 cup of the filling on each of four bread slices. Top with lettuce and remaining bread.

Variation:

BEEF SALAD SANDWICH:

Per serving: Calories, 235; Total fat, 7 grams; Saturated fatty acids, 2 grams; Cholesterol, 32 milligrams; Sodium, 385 milligrams.

Use 1 cup chopped, cooked lean beef in place of chicken.
