CRUNCHY BARLEY SALAD
 

2 c. cooked, well drained, pearl barley (1/2 c. uncooked)
1/2 c. water chestnuts, drained, sliced
1 c. chopped celery
1/4 c. chopped green pepper
1/4 c. chopped onion
1 c. cubed ham
1 pkg. Italian salad dressing mix
1/3 c. sugar
1/4 c. salad oil
1/3 c. pimentos

Mix together cooked barley, water chestnuts, celery, green pepper, pimentos, onion and ham. Cover and chill.

In a screw top jar, combine Italian dressing mix with sugar and salad oil. Cover and shake well. Chill.

To serve, combine and serve on lettuce leaf.
