CUCUMBER SALAD
 

3 cucumbers, thin burpless variety
1/2 c. white vinegar
3 tbsp. cold water
1 tsp. sugar
1 med. onion, sliced
Salt and freshly ground pepper

Peel and slice cucumbers very thin. Mix vinegar, water, sugar, salt and pepper to taste. Combine cucumber and onion slices. Place in jar. Pour vinegar mixture to cover and place in refrigerator to chill. This will keep for several days. For a slightly different taste, add a few sprigs of fresh dill.
