1 med. cucumber 1/2 c. vinegar 1/2 c. water 2 tbsp. sugar 1/4 tsp. salt 1 sm. onion, thinly sliced Salad greens Run fork lengthwise down side of unpeeled cucumber; cut into thin slices. Mix vinegar, water, sugar and salt; pour on cucumber and onion. Cover and refrigerate at least 2 hours. Just before serving, drain and serve on salad greens. 4-6 servings. |
