TOMATO-CUCUMBER SALAD
 

3 med. tomatoes, diced
1 cucumber, peeled & diced
1/4 c. chopped fresh chives or 1 c. chopped sweet onion
1 tsp. salt
5 tbsp. olive oil
3 tbsp. chopped parsley
2 cloves garlic, minced

Toss first 4 ingredients into a colander and drain for 30 minutes. Transfer to large bowl. Mix oil, parsley and garlic and pour over veggies. Refrigerate at least 1 hour before serving. Line salad bowl with leaves of Romaine or Boston lettuce. Pour salad mixture onto vegetables and lettuce. Serves 6.
