2 lg. cucumbers, peeled & sliced 1 tsp. salt 1 med. green pepper, chopped 2 or 3 green onions, sliced (or 1/4 c. white chopped onion) 1 tbsp. parsley, chopped 1/3 c. white vinegar 2 tbsp. sugar 2 tbsp. vegetable oil 1/2 tsp. dill weed In medium bowl, sprinkle sliced cucumbers with salt. Let stand 20 minutes. Rinse cucumbers well and pat dry with paper towel. Mix in pepper, onion and parsley. Combine rest of ingredients and pour over cucumbers. Cover and chill 2 to 4 hours or overnight. Garnish with cherry tomatoes if desired. Makes 8 servings. |
