MOM'S GERMAN POTATO SALAD
 

8 potatoes
4 slices of bacon
1/2 sm. onion

SAUCE:

3 tbsp. cornstarch
2 c. cold water
2/3 c. sugar
2/3 c. vinegar
1 tsp. salt
Dash of pepper

Scrub and boil potatoes until soft to a fork. Drain potatoes, allow to cool; peel away skins and slice into large bowl.

In a frying pan, fry bacon strips. When crisp, remove from pan and crumble onto potatoes. Saute diced onion in the same frying pan. Remove from pan and put onions into the bowl. Pour excess fat from the frying pan.

Dissolve cornstarch in cold water. Combine that mixture, the sugar, vinegar and salt into the same frying pan; bring to a boil. Sauce will be somewhat thick. Pour over potatoes, bacon and onions. Stir lightly. Pepper to taste. Serve warm.
