SOY BEAN SALAD
 

1 c. dry soy beans, cooked (or 2 c. fresh or canned)
1 med. onion, sliced
1 1/2 stalks celery, diced
1/2 c. cashews, coarsely chopped
1/4 c. pickle relish, drained
1/2 tsp. basil
1 tsp. seasoned salt
Mayonnaise
Sliced onions

Mix everything and let stand in refrigerator overnight to blend flavors. Dried soy beans should be soaked overnight. Then cook about 3 hours. In pressure cooker - 30-40 minutes.
