CHILI CORN SALAD
 

2 c. fresh corn
4 c. cooked chicken, turkey or ham
1 c. green pepper, diced
2 tbsp. mayonnaise
2 tsp. lemon juice
1 tsp. salt
1 tsp. chili powder
1/4 tsp. black pepper

1. Cook fresh corn and remove from ears (4 ears).

2. Combine corn with meat and green peppers; set aside.

3. Blend mayonnaise with lemon juice, salt, chili powder and black pepper.

4. Pour over corn mixture. Toss gently.

5. Serve on lettuce, garnished with cherry tomatoes and olives. Makes 6 servings.
