WATERCRESS & ORANGE SALAD
 

2 heads Boston or butter lettuce
1 c. watercress leaves
2 oranges, peeled & cut into segments
2 avocados, peeled & sliced
3/4 c. coarsely chopped walnuts (opt.)
Salt & pepper

SWEET & SOUR DRESSING:

1/3 c. sugar
1/4 c. red wine vinegar
1 1/2 tsp. lemon juice
1/4 c. salad oil
2 tsp. chili sauce
1/2 tsp. Worcestershire sauce
1/4 tsp. dry mustard
1/4 tsp. curry powder
Few dashes of Tabasco sauce
1 clove garlic, crushed

Wash lettuce and tear into bite-sized pieces. Refrigerate until ready to use. Make Sweet and Sour Dressing. Mix sugar, vinegar, lemon juice, oil, chili sauce, Worcestershire, mustard, curry, Tabasco, and garlic in glass jar. Shake well.

Before serving, mix lettuce, watercress, orange segments, avocado and walnuts in a salad bowl. Toss with as much dressing as desired. (You'll have more than enough dressing. It can be refrigerated for up to a month and is good for any kind of fruit salad.)
