2 chicken breasts, cubed 2 c. Rotini 1 c. fresh tomatoes, diced 1/3 c. Parmesan cheese 1/4 c. scallions, chopped 1/2 pepper, diced 3 tbsp. butter Fresh parsley to taste Dill & tarragon to taste Salt & pepper to taste Paprika to taste 1 c. broccoli florets 1 c. zucchini cubes Add or omit what vegetables you want. Cook and drain rotini. Saute chicken cubes in butter with salt and pepper. Add paprika (Old Bay for seasoning if you like). Saute any of the vegetables listed if you like. Mix with all other ingredients. Serve warm. |
