PEPPER STEAK WITH RICE
 

3 c. hot cooked rice
1 lb. round steak, 1/2 inch thick
1 tbsp. paprika
2 tbsp. butter
2 cloves garlic, crushed
1 1/2 c. beef broth
1 c. sliced green onion
2 green peppers, cut in strips
2 tbsp. cornstarch
1/4 c. each soy sauce and water
2 lg. tomatoes, cut in 1/8th's

Pound steak to 1/4 inch thickness. Cut into 1/4 inch wide strips. Sprinkle meat with paprika and let stand while preparing other ingredients.

Using large skillet, brown meat in butter. Add garlic and broth. Cover and simmer 30 minutes. Stir in onions and green peppers. Cover and cook 5 minutes more.

Blend water, soy sauce and cornstarch. Stir into meat mixture. Cook, stirring until clear and thickened (about 2 minutes). Add tomatoes, stir gently. Serve over rice. Serves 6.
