CHICKEN FRIED RICE
 

1/2 c. diced cooked ham, chicken or pork or other meats)
2 tbsp. salad oil
1 (3 oz.) can sliced mushrooms, drained
4 c. chilled day old or so, cooked rice
3 tbsp. soy sauce
1 green onion, chopped
1 well beaten egg

Brown meat in hot oil. Add mushrooms, rice, soy sauce. Continue to fry over low heat 10 minutes, stirring frequently. Add well beaten egg and stir fry for 5 minutes or until fluffy. Add more soy sauce if you prefer darker color. Makes 6-8 servings.
