CHINESE FRIED RICE WITH BACON AND
MUSHROOMS
 

3 tbsp. bacon drippings
1/2 c. onion, diced
1 c. celery, diced
1 c. sliced mushrooms
3 c. cooked rice
2 tbsp. soy sauce
1 egg, slightly beaten
1/2 lb. crisp, crumbled bacon

Heat bacon drippings in a skillet. Add onions and celery; cook until tender. Add mushrooms, rice and soy sauce. Cook 10 minutes on low heat, stirring occasionally. Stir in beaten egg and stir only until egg is done. Add bacon and mix well.
