In a 10 inch skillet, cook beaten egg in 1 tablespoon oil without stirring. Let sit. Invert skillet over basking dish or cutting board. Cut into short narrow strips. In same skillet cook meat, mushrooms and 3 tablespoons soy sauce and green onion in remaining oil.
About 4 minutes. Stir in rice and egg strips; heat through. Serve with additional soy sauce.
